Hi,
Is is necessary to use dielectric unions when installing a hot water heater with a stainless steel tank?

Never saw a stainless steel domestic water heater. What does that puppy cost$ I do not know where stainless sits in the nobility series of metals; I suspect brass nipples would be fine.
Probably a tankless water heater.

It is an indirect Thermastor.

You do not have to use them, but they will make it easier to make the connections.
