Sink shutoff or Shark Fitting?

I am doing away with one of my vanity sinks and will no longer need the hot or cold line. Should i leave the shutoffs on (closed) or I have shark fittings caps for these pex lines? Thanks, Danny

P.S. This area will not be accesible after I am done with the remodel.

I would cap them. I'm not sure you want to use shark bites for long term use, because they have not been around long so no test of time.
