hi
I am in the process of replacing my stop valves my toilets and have the following questions.

Since the copper pipe has Male 1/2 " threads i plan on replacing with the following stop valve from brasscraft KTR17 C1 which is available at home depot. However the box labels mentions "For IRON PIPE". Can this be put on the 1/2 threaded male copper although it says IRON?

Yes. "IPS" means "iron pipe size" which is just a designation of the size and type of threads, not the type of metal the threads are necessarily made of. It implies that the threads are tapered (thinner at the end of the pipe, a little thicker as the threads go up the pipe to ensure a good seal).

Another thing might be that "copper" pipe does not have threads, so it is either steel or brass.

Or it could be copper with a male iron pipe thread adapter soldered on...

My stop valves are threaded onto copper male threaded fittings soldered onto the ends of the copper supply pipes. I don't have any galvanized in my home.

adapters would be pipe threads not pipe.
