I have been in Plumbing near 2 years and am in the process of learning about the Drain Waste Vent systems.
Can you recommend some books or internet sites which teach proper isometric drawing techniues?
I would also like to find some information about the types of stack systems.
Single stack
Two stack
Philidelphia
Sovent
etc...

For the drawing... Google sketchup?
Allows you to draw just about anything, in full-on 3D, and export / print as a JPEG.
And it's FREE!

The learning curve is pretty short, they have a bunch of instructional videos, a forum to get advice, etc... for plumbing systems, learn to use the "follow me" tool, and you're set.
I use it mainly for planning remodels, I've attached a few pics below.
Also very useful for calculating dimensions, angles, etc, like roofing layouts: sketch it out with the dimensions you have, then measure the cut angles off the sketch. I've also used it to draw some wiring diagrams here...
Just incredibly versatile & easy program. Can't think of enough good things to say about it.

Oh, and did I mention that you can download pre-drawn components, and use them in your drawings? From the google 3-D warehouse. Here's their selection of pipe fittings...

and the results for "plumbing", worth scrolling through a few pages:
